Mini Fairy Cakes

2 heaped Tbs Butter
4 heaped Tbs Sugar
1 egg
1 tsp Vanilla Essence
5 heaped Tbs Self Raising Flour
3 – 4 Tbs Milk

  • Preheat the oven to 180ºC
  • Beat the butter and the sugar together until it becomes white and fluffy using a wooden spoon
  • Now add the egg and the vanilla essence, mix well
  • Add the Self raising flour into your bowl with your butter mixture
  • Mix
  • Add the milk until the mixture drops of your spoon
  • Now fill your 2 mini cake moulds half full
  • Bake for 15-20 minutes or until golden
  • Let them cool
  • Ice with butter icing, sprinkles and silver balls
  • Eat and enjoy

**To make butter icing beat together half the amount of soft butter to double the amount of icing sugar, a drop of milk and a drop of food colouring.
