Iced Vanilla Cake

4 heaped tbs soft butter
7 tbs caster sugar
2 eggs
4 tsp vanilla essence
5 tbs milk
12 heaped tbs Self Raising Flour


  • Pre-heat the oven to 180ºC
  • Spray the small cake tin with Spray & Cook
  • Use a wooden spoon and beat the butter and sugar in a bowl until fluffy and pale
  • Beat in the eggs and vanilla
  • Sift the flour into the bowl. Add the milk and gently mix
  • Mix well .The mixture should look smooth if not add a tablespoon or 2 of flour
  • Use a tablespoon to put the mixture into the cake tin
  • Bake for 30-35 minutes until baked through, test by poking the cake with a wooden skewer, if the skewer comes out dry the cake is ready
  • Let it cool
  • Ice with coloured butter icing and decorate


**Make Butter icing by beating together ½ block of soft butter with 2 cups of sifter icing sugar, 2 tsp vanilla essence and 2 Tbs milk
